This recipe comes from the home of my friend Sara. I think it came from her Rachael Ray cookbook. Anyway, it is a home run for both of our households. People- this pasta is SO GOOD. Give it a whirl!
1/2 tsp of salt
1/2 lb of linguini
1 cup heavy cream
2 tbsp of cognac or dry sherry
grated zest of one lemon
grated zest of one orange
2 tbsp chopped fresh mint (optional)
12 basil leaves shredded or torn
1/2 cup grated Parmesan
Bring large pot of water to a boil, add salt and linguine. Cook according to package directions al dente (undercooked a bit). Drain.
Meanwhile, in a skillet over medium heat, warm cream. Stir in cognac or sherry, zests, and salt. Simmer 7-10 minutes. Add mint and basil. Toss hot, drained pasta with sauce and grated cheese.
You can use less cream for a healthier version
Add a little salt at the end. It makes a HUGE difference!
