>Home Run Recipe: Baked Oatmeal


Every household has their home run recipes, right? You know, those recipes that become a staple to your meals…the ones you can’t get enough of…the ones that everyone asks for the recipe for. Well, this week, I’m going to share seven of our current Home Run Recipes. Gear up. It’s going to be a Yummy week.
This is a recipe that I featured back in April. Since then, I’ve had MULTIPLE requests for it from friends and family. So, I’ve decided to feature it again and kick off the week with one of our absolute favorites.
Baked Oatmeal
3 cups oatmeal
1 cup sugar
1 tsp salt
1 tsp baking powder
1 tsp cinnamon
1/2 cup nuts (I used pecans. Sunflower seeds work too)
1/2 cup craisens
1/2 cup oil
2 eggs
1 cup milk
1 chopped apple

Mix all the ingredients together, pour into greased 9×9 or 8×8 baking dish.
Bake at 350 for 23 minutes.
(My original recipe from my friend, Carly, says bake it for 30 minutes but we like it a bit under cooked)

Polly’s Tips:
Serve warm.
Pour a little milk over it.
Add some fresh fruit to it.
It saves really well in the fridge so it’s a great meal to give to someone or to save and munch on throughout the week.

  1. >I made this Saturday and it was awesome! I made a few changes – used half brown sugar, half white, replaced the oil with pumpkin, added vanilla (because in my opinion, EVERYTHING is better with vanilla), and left out the craisins. We loved it and will be eating it for breakfast this week. Thanks for posting!
